Nicaraguan Coffee in Compostable Packaging
We source these Rainforest Alliance certified beans from Hacienda Sajonia. The farm is run by two English brothers, Tom and Matt Hills, who arrived in Nicaragua in 2010. They have put social and environmental good at the heart of their endeavour to farm speciality coffee. This delightful single estate is full bodied with notes of caramel, honeydew melon, demerara and and orange acidity.
Hacienda Sajonia is located in the beautiful El Diablo – Datanli nature reserve in the mountains of northern Nicaragua. It is right in the centre of Nicaragua’s premier coffee growing region. The 1000 acre farm is rich with flora and fauna and over half of it is blanketed by primeval rainforest.
The farm has an altitude range of between 1,280 metres to 1,580 metres at its peak. It is one of the most highly elevated in Nicaragua and has the perfect climate for cultivating high quality arabica coffee.
Tom and Matt say:
Providing better working conditions for the employees, through access to more secure jobs, healthcare services, education opportunities and raising the general level of living standards. We mean respecting, caring for and nurturing the beautiful environment around us, including protecting wildlife habitats, minimising water pollution and waste, reducing soil erosion and recycling waste where possible, or dealing with it appropriately. And we mean using modern but sensitive farm management and agricultural husbandry techniques that will allow for better coffee to be produced in a more efficient and stable manner.
The aim is to benefit ALL of the stakeholders in the farm today and in the future: the natural environment, the owners, the employees and community, and our fine speciality coffee-loving customers.

Which grind should you choose
Wholebean
Grind at home coffee to ensure the freshest coffee possible, nothing compares to a freshly ground bean. It also means that you can experiment with grinding beans more coarsely or finely for different brewing methods. Buy this coffee if you have a home grinder.
Ground
This is pre ground coffee suitable for use in cafetiere/French press and filter. It is easy and quick to use and ideal if you don’t have a grinder at home.
Espresso
This is pre ground coffee suitable for use in stove tops/moka pots and espresso machines. It is quick and easy to use and achieves a finer grind than most home grinders will allow.
